    List of Ingredients


    • 1 C. light brown sugar
    • 1 C. superfine sugar
    • 1 C. Crisco
    • 2 jumbo eggs
    • 20 oz. can crushed pineapple, well drained
    • 1 1/2 tsp. pure vanilla
    • 1/2 C. chopped pecans
    • 4 C. unbleached flour
    • 1/2 tsp. sea salt
    • 1 1/2 tsp. baking soda
    • 1/2 tsp. baking powder


    Instructions


    1. Preheat oven to 350 degrees F. Combine flour, salt, baking soda and baking powder. In a separate bowl mix together vanilla, nuts and pineapple and set aside.
    2. Using an electric mixer cream Crisco, both sugars and eggs until light and fluffy. Stir, gradually and by hand, the dry and pineapple mixtures.
    3. Drop by spoonfuls onto a parchment lined cookie sheet. Bake for 12-15 minutes. Don't stack theses cookies as they will stick together.
