    List of Ingredients


    • 1 egg
    • 2 T. soy sauce
    • 1/8 tsp. pepper
    • 3 T. vegetable oil
    • 1 clove garlic, minced
    • dash of ground ginger
    • 3 C. cold rice, cooked
    • 4 green onions, sliced
    • 2 C. cubed, cooked beef
    • 8 oz. can corn
    • snow peas, cooked (optional)
    • 1/4 C. chopped peanuts


    Instructions


    1. In small bowl beat egg with fork; stir in soy sauce and pepper. Set aside.
    2. Heat wok over high heat; add oil. Stir-fry garlic and ginger in hot oil 30 seconds. Add rice and onions; stir-fry 5 minutes. Stir in beef, vegetables and nuts. Cook, stirring often, for 6-8 minutes.
    3. Drizzle egg mixture over rice mixture, stirring constantly, about 1 minute or until egg is set.
