    List of Ingredients


    • 3 eggs
    • 1 1/2 C. super fine sugar
    • 1 C. brown sugar, packed
    • 1 C. oil
    • 3 tsp. pure vanilla
    • 2 C. zucchini, peeled and grated fine
    • 3 C. unbleached all-purpose flour
    • 2 tsp. cinnamon
    • 1 tsp. apple pie spice
    • 1 tsp. sea salt
    • 1 tsp. baking soda
    • 1/2 tsp. baking powder
    • 1/2 C. walnuts, chopped fine


    Instructions


    1. Beat eggs. Add oil, vanilla and sugars. Add zucchini and mix well. Sift together dry ingredients and mix well. Add to zucchini mixture. Stir in nuts and pour into two greased loaf pans. Bake at 325 degrees F. for 1 hour or until bread pick tests done.


    Final Comments


    1/2 cups of raisins may be added with the nuts if desired.
