    Baked Buffalo Chicken Wings

    â—¦ 4 pounds chicken wings, split into flats and drumettes
    â—¦ 1 tablespoon baking powder
    â—¦ Kosher salt and freshly ground black pepper
    â—¦ ½ cup crumbled blue cheese (about 2 ½ ounces)
    â—¦ ½ cup sour cream
    â—¦ ¼ cup mayonnaise
    â—¦ 1 tablespoon buttermilk
    â—¦ 1 tablespoon fresh lemon juice
    â—¦ ½ cup (1 stick) unsalted butter, melted
    â—¦ ½ cup mild hot sauce, such as Frank's
    â—¦ Celery and carrot sticks, for serving

    Recipe

    Arrange the chicken pieces in a single layer on a rimmed baking sheet. Using a fine-mesh strainer, dust half the baking powder evenly over the chicken. Flip the pieces over and dust with the remaining baking powder. Use your hands to rub the baking powder into the wings, then transfer them to a wire rack set over another rimmed baking sheet. Liberally season both sides of the chicken with salt and pepper. Cover with plastic wrap and refrigerate for at least 1 hour or preferably overnight.

    Preheat the oven to 450° F.

    Remove the chicken pieces from the refrigerator, uncover, and immediately transfer them to the oven. Bake, turning once halfway through, until the chicken is golden brown all over and cooked through, 50 to 55 minutes.

    Meanwhile, make the blue cheese dressing: Whisk together the blue cheese, sour cream, mayonnaise, buttermilk, and lemon juice in a medium bowl until smooth. Season the dressing with salt and pepper.

    Pour the melted butter and hot sauce in a large bowl and stir to combine. Add the baked chicken pieces to the bowl and toss to coat evenly in the sauce. Transfer the chicken to a serving platter and serve with the blue cheese dressing for dipping and celery and carrot sticks alongside.

    Serves 4 to 6
