    Buttermilk-Fried Vidalia Onion Rings

    List of Ingredients


    • 2 large Vidalia onions
    • 1 cup unbleached all-purpose flour
    • 1 tsp baking powder
    • 1 Tbsp sugar
    • Pinch of cayenne pepper
    • Kosher salt
    • 2 cups buttermilk
    • Corn or canola oil for frying


    Instructions


    1. Cut the onions into ½-inch slices and separate into rings.
      In a large bowl, whisk together the flour, baking powder, sugar, and cayenne pepper. Season with salt. Add the buttermilk and whisk until smooth.

    2. Pour oil into a deep, heavy-bottomed saucepan or Dutch oven to a depth of 2 inches and heat over high heat until hot but not smoking.

    3. Working in batches, dip the onion rings in the batter, letting the excess drip back into the bowl, and fry until golden brown, 2 to 3 minutes. Transfer to paper towels to drain and keep warm in a low oven while frying the rest. Sprinkle with additional salt and serve at once.

      Serves 6 to 8
