    Chipotle Shrimp Cocktail

    "A bright citrus-infused marinade spiked with fresh cilantro and the smoky heat of chipotles in adobo sauce takes the classic recipe south of the border. Crisp bell peppers add color and crunch. Like the classic, this is a do-ahead dream: Just layer the ingredients, then sit back and chill."

    List of Ingredients

    ◦ 1 large red onion
    ◦ 1 medium-size red bell pepper
    ◦ 1 medium-size yellow bell pepper
    ◦ 2 pounds peeled and deveined, large cooked shrimp with tails
    ◦ 1 cup ketchup
    ◦ cup chopped fresh cilantro
    ◦ cup fresh lime juice
    ◦ 3 tablespoons orange zest
    ◦ cup fresh orange juice
    ◦ 2 to 3 canned chipotle peppers in adobo sauce, chopped

    Recipe

    Cut the onion and the bell peppers into thin strips; layer with the shrimp in a large zip-top plastic freezer bag.

    Whisk together the ketchup and next five ingredients; pour over shrimp mixture. Seal and chill 12 to 24 hours, turning the bag occasionally. Serve using a slotted spoon.

    ❧ The Classic Shrimp Cocktail:

    From the 60s to the 80s, Shrimp Cocktail was the darling of suburban country club cuisine. It was the appetizer that got every party off to a great start, whether mounded in giant seashells with sauce on the side for a glitzy cocktail soire or nestled artfully in crystal sherbet dishes for a formal seated dinner. Here we pay homage to our all-time favorite classic cocktail sauce.

    Cocktail Sauce: Whisk together cup chili sauce, ⅓ cup prepared horseradish, ⅓ cup ketchup, 2 tablespoons fresh lemon juice, 1 teaspoons Worcestershire sauce, 1 teaspoon hot sauce, and teaspoon each of salt and ground black pepper. Cover and chill.

    Makes a generous 1 cup
