    Sister's Favorite Spinach Dip

    Recipe Introduction

    "I have one daughter. As in many homes across the South, we call her 'Sister,' or 'Sis' for short. That girl of mine loves spinach more than just about anything. This baked spinach dip is Sister's favorite. I make it for her birthdays and when she's home for the weekend. It stands out from other spinach dips that you may know because, among all the creaminess, it has a little heat from jalapeños and spicy chile tomatoes, and it's sweet from sautéed onions. Spoon any leftovers (if you have them) on a baked potato or grill it between two pieces of bread. Sister knows, y'all. Sister knows."

    List of Ingredients

    â—¦ 1 tablespoon unsalted butter
    â—¦ 2 small sweet onions, finely chopped
    â—¦ 1 (10-ounce) package frozen spinach, thawed
    â—¦ 1 ½ cups shredded mild cheddar cheese
    â—¦ 1 ½ cups shredded Monterey Jack cheese
    â—¦ 1 (8-ounce) package cream cheese, at room temperature
    â—¦ 2 tablespoons jarred chopped jalapeños
    â—¦ 1 (10-ounce) can diced tomatoes with green chiles
    â—¦ ½ cup half-and-half
    â—¦ 1 teaspoon granulated garlic,
    â—¦ Tortilla chips, Little Toasts, or fancy crackers, for serving

    Recipe

    Set the oven to 350° F. Lightly grease a 9-inch pie plate or 8-inch baking dish.

    In a skillet, melt the butter over medium heat and sauté the onions until tender and golden. Remove from the heat.

    Working with a handful at a time, squeeze the spinach nearly dry and transfer to a bowl. Add the shredded cheeses, cream cheese, sautéed onions, and jalapeños. Drain the can of tomatoes almost entirely, leaving a little bit of liquid, and add to the bowl. Add the half-and-half. Stir everything together well, then season with the granulated garlic and stir again. Spread the dip into the greased pie plate or baking dish and bake for 20 minutes or so, until it's melted and bubbly and browning a bit on the top. Serve with your choice of dippers.

    Makes 1 (9-inch) pie plate or (8-inch) baking dish
