    Ashley's Grilled Barbecue Chicken Flatbread

    Recipe Introduction

    "One thing is certain: My sister knows how to have a good time! When it comes to food, she's always creating fun and tasty appetizers to get the meal — and party — started. With a glass of wine in hand, she can easily manage herself in the kitchen, at the grill, or as the perfect hostess. Her grilled flatbread is the perfect appetizer for entertaining as it cooks up quickly and can be cut into individual portions to serve by hand."

    List of Ingredients

    ◦  1 pound bakery pizza dough, at room temperature
    ◦  1 tablespoon extra virgin olive oil
    ◦  1 cup bottled barbecue sauce
    ◦  2 cups shredded deli-roasted chicken
    ◦  ¼ cup cooked and crumbled bacon
    ◦  1 cup (4 ounces) shredded Monterey Jack cheese
    ◦  1 cup (4 ounces) shredded Gouda cheese
    ◦  ½ cup very thin red onion slices
    ◦  ¼ cup loosely packed chopped fresh cilantro
    ◦  Pinch of kosher salt

    Recipe

    Preheat grill to 275° to 300° F (medium-low). Place dough on a baking sheet or cutting board, and drizzle with oil. Stretch or roll dough to ¼-inch thickness, forming a 12- to 13-inch oval.

    Slide dough from baking sheet onto cooking grate of grill.
    Grill, covered with grill lid, 3 minutes or until top of dough begins to bubble and grill marks appear on underside. Turn dough over, and reduce grill temperature to 250° to 300° F (low).

    Spread barbecue sauce over crust. Top with chicken and next four ingredients. Grill, covered with grill lid, 4 minutes or until cheeses melt. Sprinkle with cilantro and salt. Cut into 4-inch squares.


    Makes 9 appetizers
