Sauce: Sweet and Spicy Barbecue Sauce

    Source of Recipe

From "The Good Home Cookbook" by Richard Perry

    Recipe Introduction

"For those with a sweet tooth, this sauce is finger-licking good. Try it with grilled chicken, which goes well with sweet sauces. If you like your sauce extra spicy, just leave the jalapeño seeds in."

    List of Ingredients

    â—¦ 2 cups tomato sauce
    â—¦ ½ cup cider vinegar
â—¦ ¼ cup firmly packed brown sugar
    â—¦ ¼ cup molasses
    â—¦ ¼ cup Worcestershire sauce
    â—¦ 3 tablespoons tomato paste
    â—¦ 1 tablespoon dry mustard
â—¦ 1 jalapeño chile pepper, seeded and minced
â—¦ 2 to 4 drops hot pepper sauce, such as Tabasco
â—¦ ½ cup crushed pineapple or apricot preserves
    â—¦ Salt and pepper

    Recipe

Combine the tomato sauce, vinegar, brown sugar, molasses, Worcestershire sauce, tomato paste, mustard, jalapeño, and hot pepper sauce in a medium saucepan over medium heat.

Bring to a boil, reduce the heat, and simmer, stirring occasionally, for 20 minutes.

Remove from the heat and stir in the pineapple.
Cool and season to taste with salt and pepper. Serve at room temperature. The sauce can be stored in the refrigerator for 2 to 3 weeks.

    Makes about 3½ cups
