    Diner-Style American-Cheese Omelette

    Recipe Introduction

    At virtually every diner, breakfast joint, truck stop, and pancake house we've visited, we've encountered variations on this exquisitely simple omelette: a fluffy disk of cream-enriched scrambled eggs folded around a gooey core of molten American cheese. With a side of crisp hash browns and a rasher or two of bacon, it occupies a well-deserved position in the pantheon of all-time great breakfasts.

    List of Ingredients

    ◦  1½ tablespoons unsalted butter
    ◦  5 eggs
    ◦  Kosher salt and freshly ground black pepper, to taste
    ◦  3 tablespoons heavy cream, whipped into stiff peaks
    ◦  2 slices American cheese

    Recipe

    Heat oven to 400° F. Melt butter in an ovenproof 10-inch nonstick skillet over medium heat.

    Meanwhile, whisk eggs, salt, and pepper in a bowl until fluffy and fold in whipped cream; add to skillet. Using a rubber spatula, cook, stirring occasionally to form large curds, until eggs are almost set but not browned, 2 to 3 minutes.

    Pat eggs into an even layer. Lay cheese slices, overlapping slightly, over one side of eggs. Using the spatula, lift and fold other side of eggs over cheese. Bake until omelette is set and lightly golden and cheese is melted, 1 to 2 minutes.


    Serves 1
