    Fluffy Flapjacks

    List of Ingredients


    • 2 cups all-purpose flour
    • 2 tablespoons sugar
    • 2 teaspoons baking powder
    • ½ teaspoon salt
    • 2 cups milk
    • 4 large eggs, separated
    • 2 tablespoons butter, melted
    • Toppings of choice, such as: pure maple syrup, fresh fruit, and butter


    Instructions


    1. Preheat the oven to 200° F. Preheat a griddle or large skillet over medium-high heat.

    2. Combine the flour, sugar, baking powder, and salt in a large bowl. Add the milk, egg yolks, and melted butter, and beat with a whisk until well blended.

    3. In a separate large bowl, beat the egg whites with a mixer until they are stiff. Fold the whites into the batter.

    4. Grease the griddle, then ladle about â…“ cup of batter onto the griddle for each pancake. Cook for 2 to 4 minutes, until the tops are bubbly. Flip the pancakes with a spatula and cook for another 2 to 4 minutes. Don't let the griddle smoke; adjust the heat as needed.

    5. Remove the pancakes from the griddle as they are finished and place them on an ovenproof plate to keep warm in the oven. Continue making pancakes until all the batter is used, greasing the griddle as needed. Serve the pancakes with toppings as desired.

      Serves 4 to 6
