    Fried Country Ham with Redeye Gravy

    Recipe Introduction

    "Redeye gravy, a simple but essential component of the full-on Southern ham breakfast, is the alchemical result of ham drippings cut with black coffee: Salty and earthy, bitter and sweet."

    List of Ingredients

    â—¦ One 1 ¼-inch-thick slice bone-in country ham
    â—¦ ½ cup boiling coffee

    Recipe

    Fry ham in a large skillet over medium heat, turning once, until browned on both sides, about 10 minutes. Transfer ham to a warm plate.

    Add coffee to skillet and stir with a wooden spoon, scraping up any brown bits on bottom of pan. Pour gravy over ham.

    Serves 1 to 2
