    Granola

    List of Ingredients


    • 3 cups oatmeal (not instant)
    • 1 cup chopped nuts (pecans are my favorite)
    • ½ cup honey or maple syrup
    • 2 tablespoons brown sugar
    • ¼ cup melted coconut oil or avocado oil
    • ½ teaspoon sea salt
    • 1 teaspoon vanilla extract
    • ½ teaspoon ground cinnamon (optional)
    • 2 cups any combination of the following:
    • Sunflower seeds
    • Shredded coconut
    • Dried fruit of choice
    • Extra chopped or ground nuts of choice
    • Mini chocolate chips or chunks (add in after granola is cooked and cooled; not before)


    Instructions


    1. Preheat oven to 275° F.
      Mix all of the ingredients together, except dried fruit or chocolate, in a large bowl. Pour into a large, rimmed baking sheet.

    2. Bake for 45 to 55 minutes until golden brown and toasted. Stir the granola every 15 to 20 minutes to prevent burning. Take out of the oven, and if you're adding dried fruit, go ahead and mix it all in together.

    3. Allow to cool completely before adding chocolate and storing in an airtight container, if you don't eat it all at once. You can eat it as cereal, mix it in with yogurt, or snitch a few handfuls all by itself.

      Makes 5 to 6 cups
