    Old-Fashioned Home-Fried Potatoes

    List of Ingredients


    • 3 Tbsp fresh bacon fat
    • 5 Idaho potatoes, thinly sliced
    • 3 slices bacon, diced
    • 1 sweet onion, thinly sliced
    • Salt and freshly ground black pepper to taste
    • Chopped fresh parsley, for garnish


    Instructions


    1. Heat the bacon fat in a heavy iron skillet.

    2. Add the potatoes, bacon, and onion and cook, covered, over medium heat 10 to 15 minutes. Shake the pan while the potatoes are cooking so the bacon and onion will not burn (you can place the bacon and onion on top of the potatoes, to help prevent their burning). Turn the potatoes from time to time with a spatula and try to keep the onion on top.

    3. Remove the cover, and continue cooking until the potatoes are golden brown and crunchy, 10 to 12 minutes. Sprinkle with salt, pepper, and parsley.

      Serves 6
