    Great-Grandma Lillian's Pound Cake

    Recipe Introduction

    "This young man's surprisingly seasoned voice earned him fame as the first country music winner on American Idol. Although Scotty McCreery is a great singer, he admits he's not a good cookbut he's got grandmothers and great-grandmothers who were. Scotty comes from a long line of fine cooks, like his great-grandma Lillian, whose specialty was baked sweets. This recipe is at least four generations old, having been handed down on Scotty's mom's side of the family. It's extra good with a dollop of whipped cream and fresh blueberries."

    List of Ingredients

    ◦ 1 cup butter
    ◦ cup shortening
    ◦ 3 cups sugar
    ◦ 6 large eggs
    ◦ 1 tablespoon vanilla extract
    ◦ 3 cups all-purpose flour
    ◦ 1 teaspoon baking powder
    ◦ ⅓ teaspoon table salt
    ◦ 1 cup milk

    Recipe

    Preheat oven to 350 F. Beat butter, shortening, and sugar at medium speed with an electric mixer 2 minutes or until light and fluffy. Add eggs, and beat 1 minute until creamy. Beat in vanilla just until blended.

    Combine flour, baking powder, and salt; add to butter mixture alternately with milk, beginning and ending with flour mixture. Beat 5 minutes.

    Spoon batter into a greased and floured 10-inch tube pan. Bake at 350 for 1 hour to 1 hour and 10 minutes or until a long wooden pick inserted in center of cake comes out clean. Cool in pan on a wire rack 10 to 15 minutes; remove from pan to wire rack, and cool completely (about 1 hour and 25 minutes).

    Makes 10 to 12 servings






    ❧ If you prefer pound cake squares, use a 13- x 9-inch baking pan. Bake 50 to 55 minutes; cool as directed, and cut into 12 squares.
