    Spiced Cherry Amaretto Jam

    List of Ingredients


    • 4 pounds sweet cherries
    • 4½ cups sugar
    • ¼ cup amaretto
    • ½ cup lemon juice
    • ¼ teaspoon salt
    • 1 teaspoon ground cinnamon
    • ½ teaspoon ground cloves
    • ¼ teaspoon ground allspice


    Instructions


    1. Using a cherry pitter, remove the pits from the cherries. In batches, roughly chop the cherries using your food processor.

    2. Place the cherries into a saucepan and stir in sugar, amaretto, lemon juice, salt, and spices. Bring the mixture to a boil, then reduce heat and simmer until you've reached the desired consistency.

    3. Ladle the hot jam into sanitized pint jars, allowing ¼ inch of headspace. Lid the jars and process in a water bath canner for 10 minutes, adjusting for altitude.


      Makes approximately six 1-pint jars
