    Creamy Chive Mashed Potatoes

    Recipe Introduction

    "The luscious creaminess comes from mascarpone cheese. Tossing chopped chives in the end adds just a hint of onion flavor. Mashed potatoes are a universal comfort food that unites us all."

    List of Ingredients

    â—¦ 6 russet (baking) potatoes, peeled and halved
    â—¦ Salt
    â—¦ 1 cup whole milk, warmed
    â—¦ 4 ounces mascarpone cheese
    â—¦ ¼ cup chopped fresh chives

    Recipe

    Put the potatoes in a large pot and cover with cold water by 2 inches. Season generously with salt, bring to a boil, and cook until the potatoes are very tender, about 40 minutes.

    Drain the potatoes and return to the pot. Using a potato masher, mash them with the warm milk until smooth.

    Fold in the mascarpone and chives, and season with 1 teaspoon salt.

    Serves 6
