    Raisin Rice Pudding

    Recipe Introduction

    "I think this could quite possibly be the most misunderstood dessert. Too many have never experienced rice pudding at its best. This one is wonderfully creamy and aromatic."

    List of Ingredients

    • 2 cups water
    • 2 Tbsp unsalted butter
    • ½ tsp finely grated lemon zest
    • ¼ tsp salt
    • 1 cup long-grain white rice
    • 4 cups milk
    • ½ cup sugar
    • ½ vanilla bean, halved lengthwise
    • 1 cup golden raisins

    Recipe

    In a heavy saucepan over medium-high heat, combine the water, butter, zest and salt. Bring to a boil and add the rice. Return to a boil, cover, and reduce the heat to low. Simmer 15 minutes.

    Meanwhile, in a large saucepan, combine the milk, sugar, and vanilla bean over low heat. Stir well to blend and bring just to a simmer.

    Stir in the rice mixture and raisins. Simmer about 20 minutes, uncovered, stirring frequently until most of the milk is absorbed. Remove and discard the vanilla bean. Transfer to a serving bowl and cool at least 10 minutes before serving.

    Makes 8 servings.
