    Sausage Milk Gravy

    List of Ingredients


    • 4 ounces pork sausage
    • ¼ cup (½ stick) butter
    • â…“ cup to ½ cup all-purpose flour
    • 3 cups whole milk
    • â…› tsp red pepper flakes
    • 3 to 4 heavy pinches salt
    • ½ tsp black pepper


    Instructions


    1. In a medium skillet over medium heat, cook the sausage, breaking it up into small pieces with the back of a spoon. Continue to brown and break up the sausage until it is cooked through, about 5 minutes. Set the meat aside on a paper towel-lined plate to drain.

    2. Add the butter to the skillet and allow to melt. Whisk in the flour and continue to cook and stir until the mixture is pale yellow, 2 to 3 minutes. Slowly whisk in the milk.

    3. Bring the mixture to a boil, whisking constantly until it becomes thick, about 10 minutes. Stir in the red pepper flakes, salt, and pepper. Add the sausage back to the skillet. Serve immediately.

      Makes 2 to 3 cups, enough to serve 6 to 10 biscuits.
