    English Rice Pudding

    From "The All New Ultimate Southern Living Cookbook"

    List of Ingredients

    â—¦ 3 cups cooked long-grain rice
    â—¦ 2 cups hot milk
    â—¦ 2 cups hot whipping cream
    â—¦ 4 large eggs, lightly beaten
    â—¦ 1 ½ cups sugar
    â—¦ 1 cup raisins
    â—¦ 1 teaspoon vanilla extract
    â—¦ ¼ teaspoon salt
    â—¦ 2 tablespoons butter or margarine, cut into pieces
    â—¦ ¼ teaspoon ground nutmeg
    â—¦ Lemon Sauce

    Recipe

    Stir together first eight ingredients until thoroughly blended.

    Pour into a greased 13 x 9-inch baking dish; dot with butter, and sprinkle evenly with nutmeg. Place dish in a large pan; add hot water to a depth of 1 inch.

    Bake at 350° F for 1 hour or until lightly browned and set. Cool slightly, and cut into squares. Serve with Lemon Sauce.

    Makes 16 servings



    Lemon Sauce:

    â—¦ 1 cup water
    â—¦ ½ cup sugar
    â—¦ 2 tablespoons cornstarch
    â—¦ â…› teaspoon salt
    â—¦ 1 tablespoon butter or margarine
    â—¦ 1 tablespoon grated lemon zest
    â—¦ ½ cup fresh lemon juice

    Stir together first four ingredients in a small saucepan until smooth. Cook, stirring constantly, over medium heat 5 minutes or until thickened. Remove from heat, and stir in butter, zest, and lemon juice. Serve warm or cold.

    Makes 1 ½ cups
