    Tuna: Sunday Supper Tuna Croquettes

    From "Southern Fried" by James Villas

    List of Ingredients


    • Two 5-ounce cans solid white tuna, drained
    • 1 small onion, finely chopped
    • 1 small green bell pepper, seeded and finely chopped
    • 2 large eggs, beaten
    • 3 tablespoons all-purpose flour
    • 1 tablespoon Worcestershire sauce
    • Salt and freshly ground black pepper to taste
    • Cayenne pepper to taste
    • ¼ cup vegetable oil


    Instructions


    1. In a bowl, combine the tuna, onion, bell pepper, eggs, flour, Worcestershire, salt and pepper, and cayenne and mix till well blended and smooth. Form the mixture into 4 croquettes and place on a plate.

    2. In a large, heavy skillet, heat the oil over moderately high heat, add the croquettes, and fry till golden brown, about 3 minutes on each side, turning once.

    3. Drain on paper towels and serve hot.

      Makes 4 servings
