    Nashville Style Hot Wings

    Recipe Introduction

    "Nashville's most famous hot chicken hot spot is Prince's Hot Chicken, where it's said the chicken is so hot and so good, it's been known to substitute as an aphrodisiac. In all seriousness, hot chicken lovers are quick to admit this treatment of the bird is addictively habit-forming. Serve these on game day with our Bourbon Lemonade."

    List of Ingredients

    ◦ 2 teaspoons kosher salt
    ◦ teaspoon freshly ground black pepper
    ◦ teaspoon cayenne pepper
    ◦ teaspoon onion powder
    ◦ 2 pounds chicken wings
    ◦ 1 cup all-purpose flour
    ◦ Vegetable oil, for frying
    ◦ Hot Chicken Sauce (recipe follows)
    ◦ Upland cress, for garnish (optional)
    ◦ White bread, for serving
    ◦ Pickles, for serving

    Recipe

    In a small bowl, combine the salt, black pepper, cayenne, and onion powder. Sprinkle the wings with the spice mixture and coat evenly. In a medium bowl, add the flour and dredge the chicken wings, shaking to remove any excess flour.

    In a large deep skillet, heat 2 inches of the oil to 350 F.

    Working in batches to not crowd the pan, fry the wings for 3 to 4 minutes on each side, until they are golden brown and an instant-read thermometer inserted into the thickest part of the wings registers 165 F. Transfer the wings to a paper towel-lined baking sheet. Reserve the frying oil for the sauce.

    Brush the fried chicken with the Hot Chicken Sauce and garnish with the cress, if using.

    To serve, place the white bread on a platter and top with the hot chicken. Serve the pickles on the side.

    Makes 6 servings




    ❧ Hot Chicken Sauce:

    ◦ 6 tablespoons cayenne pepper
    ◦ 2 tablespoons dark brown sugar
    ◦ 1 teaspoon chili powder
    ◦ 1 teaspoon garlic powder
    ◦ 1 teaspoon paprika
    ◦ 1 cup frying oil, reserved from cooking Nashville Style Hot Wings

    In a medium bowl, whisk the cayenne, brown sugar, chili powder, garlic powder, and paprika. Carefully whisk in the hot frying oil.

    Makes 1 cups
