    Chile-Lime Peanuts

    Recipe Introduction

    "Just a touch of lime and salt, mingled with the scent of cumin and the kick of cayenne, elevates everyday peanuts to a sublime snack. Be sure to let the peanuts cool completely before serving. Pair with light, fruity reds and rosés, or any icy cold dry white wine."

    List of Ingredients

    • 4 cups unsalted peanuts
    • 3 Tbsp fresh lime juice
    • 2 Tbsp olive oil
    • 1 Tbsp paprika
    • 1 tsp ground cumin
    • 2 tsp salt
    • 1 tsp cayenne pepper

    Recipe

    Preheat the oven to 250°F. Put the peanuts in a large bowl.

    In a small bowl, whisk together the lime juice, olive oil, paprika, cumin, salt, and cayenne. Pour the spice mixture over the peanuts and toss well to coat evenly.

    Spread the peanuts in a single layer on a rimmed baking sheet and toast in the oven, shaking the pan occasionally, until the coating is dry and the nuts are lightly browned and fragrant, 25 to 30 minutes. Let cool completely before serving.

    Serves 10 to 12
