    Breakfast Burrito

    Recipe Introduction

    "Hungry boys need to be fed before they become 'mad hungry.' When the day ahead is an active and long one, it helps to begin with a substantial meal. This is an easy breakfast to execute if you are heading out for a road trip early in the morning and are determined to avoid feeding the guys overpriced fast food on the road. With a little planning, breakfast burritos and lunch can be prepared and packed up before leaving. Shop a day ahead. Prepare the ingredients and set up the coffeemaker the night before. In the morning you'll need no more than 10 minutes to get this breakfast burrito in the bag."

    List of Ingredients

    â—¦ 6 large flour tortillas
    â—¦ 2 small smoked chorizo sausages (or linguiça or other cured pork sausages), chopped
    â—¦ 10 large eggs, lightly beaten
    â—¦ 8 ounces Monterey Jack cheese, grated
    â—¦ â…“ cup prepared salsa (I like Muir Glen black bean and corn salsa)
    â—¦ Hot sauce (optional)

    Recipe

    Preheat the oven to 300° F. Lay the tortillas on a baking sheet. Place in the oven for 1 minute.

    Fry the chorizo in a hot pan for 1 minute, then add the eggs and scramble. Meanwhile, sprinkle cheese over each tortilla. Return the tortillas to the oven and allow the cheese to melt, about 1 minute. Remove from the oven.

    Divide the eggs and sausage evenly among the tortillas, piling the eggs and sausage in the center. Top each one with a tablespoon of salsa and drizzle with hot sauce, if using. One at a time, fold the bottom edge of each tortilla up and over the eggs and sausage, fold in each side edge to form an open pocket, then fold down that edge. If not eating immediately, wrap tightly in foil.

    Makes 6 burritos
