    Spaghetti with Meat Sauce

    Recipe Introduction

    "Bolognese sauce is the popular red meat sauce found on menus everywhere Italian dishes are served. Veal is sometimes added in addition to a splash of cream at the end. Many consider the optional sugar to be the secret ingredient. This recipe is also satisfying without these additions."

    List of Ingredients

    â—¦ 2 tablespoons oil
    â—¦ ¾ pound ground beef
    â—¦ ¾ pound ground pork or Italian sausage, removed from its casings
    â—¦ 1 medium onion, diced
    â—¦ 1 (28-ounce) can tomato sauce
    â—¦ 1 (28-ounce) can diced tomatoes
    â—¦ ½ cup dry red wine
    â—¦ 1 teaspoon minced garlic
    â—¦ 1 cup beef broth
    â—¦ 2 teaspoons dried oregano
    â—¦ 1 teaspoon dried thyme
    â—¦ 1 teaspoon fennel seeds, crushed
    â—¦ 1 teaspoon sugar (optional)
    â—¦ Salt and pepper
    â—¦ 1 pound spaghetti
    â—¦ Freshly grated Parmesan cheese, to serve

    Recipe

    Heat the oil in a large saucepan over medium-high heat. Add the beef, pork and onion and sauté, stirring to break up the pieces, until the meat is well browned, about 15 minutes.

    Add the tomato sauce, diced tomatoes, wine, garlic, broth, oregano, thyme, fennel seeds, and sugar. Season to taste with salt and pepper. Bring to a boil, reduce the heat, and simmer, partially covered, for 1 hour.

    Cook the spaghetti in a large pot of boiling salted water until done, about 12 minutes. Drain well. Top the spaghetti with the sauce and serve, passing the Parmesan cheese at the table.


    Serves 4 to 6
