Grilled Salmon Fillets with Mustard Dill Sauce

List of Ingredients
â—¦ 4 pounds salmon fillets
â—¦ Olive oil
Sauce:
â—¦ ½ cup plain yogurt
â—¦ ¼ cup Dijon mustard
â—¦ 2 tablespoons mayonnaise
â—¦ 1 tablespoon minced fresh dill plus dill sprigs for garnish
â—¦ 1 tablespoon lemon juice
Recipe
Rinse the salmon in cold water and dry with paper towels. Place the salmon in a shallow baking pan skin-side down.
To make the sauce, combine all of the ingredients in a small bowl. Whisk until well blended. Refrigerate until ready to serve.
Brush the salmon lightly with the oil and let it reach room temperature.
Preheat gas grill at high heat and then turn down to low, or build a medium charcoal fire. Grill the salmon for 7 to 10 minutes on each side, or until the flesh is flaky.
Arrange the salmon on a serving plate and garnish with dill sprigs. Serve the sauce on the side. If you prepare the salmon at home, cover the plate with plastic wrap when the fish is cool. Store in the refrigerator. Serve the salmon cold.
