List of Ingredients
â—¦ 1 medium head iceberg lettuce
â—¦ 1 tablespoon salt
â—¦ 8 ounces fresh green beans, stems trimmed
â—¦ 8 ounces pasta, cooked al dente, drained
â—¦ 2 chicken breasts, grilled
â—¦ 4 hard-boiled eggs, peeled, chopped
â—¦ 2 small ripe tomatoes, cored and chopped, if desired
â—¦ ¼ cup niçoise olives
â—¦ Salt and freshly ground black pepper
Recipe
Wash lettuce leaves, dry, then tear into bite-size pieces; set aside.
In a medium saucepan, bring 3 to 4 cups water to boil; add 1 tablespoon salt and green beans. Cook until tender but crisp, 3 to 5 minutes. Drain beans, transfer to a bowl of ice water, and let stand until just cool, about 30 seconds; dry beans well. Set aside.
Chop chicken and eggs separately.
Layer into eight Mason jars, beginning with lettuce, then pasta, beans, chicken, eggs, tomatoes, and olives. Do not add dressing. Cover and place in refrigerator until ready to eat. Pour contents onto a plate or bowl, and add dressing of your choice.
