    Sliced Tomatoes with Lemon Caper Sauce

    Recipe Introduction

    "For an elegant touch, dab a little sauce onto these luscious sliced garden-fresh tomatoes."

    List of Ingredients

    ◦ 2 fresh ripe tomatoes

    Lemon Caper Sauce:
    ◦ 2 tablespoons mayonnaise
    ◦ 2 tablespoons plain yogurt
    ◦ 1 tablespoon drained capers
    ◦ 1 tablespoon lemon juice
    ◦ 1 teaspoon grated lemon zest

    Recipe

    Bring a quart of water to a boil. Immerse tomatoes for 30 seconds. Remove from water with a fork and peel. The skin will easily come off. Remove stem; core and slice. Arrange in a shallow plastic container.

    To make the Lemon Caper Sauce:
    Combine the remaining ingredients in a small bowl and gently whisk. Pour into a small jar and take to the picnic with the tomatoes.


    Serves 2
