    Cheesy French Onion Chicken

Truly caramelized onions take time and patience, so give them the full hour called for so they can do their thing.     List of Ingredients

    â—¦ 6 boneless, skinless chicken thighs (about 2 pounds)
    â—¦ Kosher salt and freshly ground black pepper
    â—¦ 1 tablespoon minced garlic
    â—¦ 1 tablespoon dried parsley
    â—¦ 1 tablespoon olive oil
    â—¦ 1 tablespoon unsalted butter
    â—¦ 6 large yellow onions, thinly sliced
    â—¦ 1 cup beef stock
    â—¦ 1 tablespoon fresh thyme leaves
    â—¦ 2 cups shredded Gruyère cheese (6 ounces)
    â—¦ 6 (½-inch-thick) slices French bread or baguette, toasted

    Recipe

    Place the chicken thighs in a large bowl and season with salt and pepper. Add the garlic, dried parsley, and olive oil and toss to coat evenly.

    Heat a large ovenproof saucepan or Dutch oven over medium-high heat. Add the chicken and cook, flipping once halfway through, until golden brown on both sides and cooked through, about 10 minutes total. Transfer the chicken to a plate.

    Melt the butter in the same saucepan, then add the onions and season with salt and pepper. Reduce the heat to medium-low and cook, stirring occasionally, until the onions are deeply caramelized, about 1 hour.

    Preheat the broiler.

    Add the stock and thyme to the pot with the onions and bring the mixture to a simmer over medium heat. Return the chicken to the pot, nestling it on top of the onions, and sprinkle with the Gruyère. Transfer the pan to the oven and broil until the cheese is melted and golden brown, about 5 minutes. Divide the chicken thighs among six plates. Top with the onions and sauce and serve warm, with a slice of toast alongside.
