    15-Minute Garlic-Butter Ramen

    Recipe Introduction

    "As a kid who grew up in Cleveland, Ohio, I know all too well how brutal Midwest winters can be. Often, on extra-cold days I'd talk my mom into letting me stay home from school because I was 'sick.' She'd make a fire, bundle me up in blankets, and flick on the TV. They were some of the best days, and you know what made them even better? The bowls of Top Ramen and freshly popped popcorn that my mom would make for lunch. It was the ultimate comfort-food lunch. These days, my ideal bowl of ramen is salty, a little spicy, veggie filled, noodley, and generally just bursting with flavor. Nothing like the Top Ramen I ate so much of as a kid, but that's okay because my 'adult' version takes maybe 10 minutes to make. We are ditching the broth and adding some butter, plenty of garlic, and tons of fresh basil. My suggestion? Take yourself back to the age of twelve, play hooky from work, make garlic-butter ramen noodles, and watch your favorite old-school TV shows all day long."

    List of Ingredients

    â—¦ 6 tablespoons salted butter
    â—¦ 4 cloves garlic, minced or grated
    â—¦ 1 (1-inch) piece of fresh ginger, peeled and grated
    â—¦ 2 to 3 cups finely chopped, leafy dark greens, such as spinach or kale
    â—¦ 2 packs of brown rice ramen noodles, seasoning packet discarded
    â—¦ 3 tablespoons low-sodium soy sauce
    â—¦ ¼ cup fresh basil, chopped, plus more for serving
    â—¦ 2 fried eggs, for serving (optional)
    â—¦ Toasted sesame seeds, for serving (optional)
    â—¦ Freshly ground pepper

    Recipe

    In a large skillet over medium heat, melt the butter, then add the garlic and ginger, stirring constantly. Cook until the garlic is fragrant and beginning to caramelize, 3 to 4 minutes. Add the greens and cook until wilted, 2 to 3 minutes more.

    Meanwhile, cook the noodles according to package directions. Drain. Add the noodles and soy sauce to the skillet, tossing with the garlic butter. Remove from the heat and add the basil, tossing to combine.

    Divide the noodles between two bowls and top each with a fried egg, sesame seeds, and more basil, if desired. Season with pepper.
