    Veggie-Loaded Pad See Ew

    Recipe Introduction

    "Living in a small mountain town in Colorado means our takeout options are limited. Consequently, one of my favorite things to do is create homemade versions of Asian takeout meals. Surprisingly, it's just as quick to prepare at home as it is to order outnot to mention healthiersince where we live, delivery times can honestly be hours! This veggie-loaded pad see ew is a mix of rice noodles, tangy soy sauce, vegetables, and scrambled eggs. It's kind of like fried rice, but much saucier, which I love. You can use a mix of your favorite vegetables, or even buy a pre-cut stir-fry vegetable mix to save on time and prep. Once you give this recipe a try you'll be glad you didn't order in!"

    List of Ingredients

    ◦ 8 ounces rice noodles
    ◦ ⅓ cup low-sodium soy sauce
    ◦ 1 tablespoon fish sauce
    ◦ 1 tablespoon oyster sauce
    ◦ 1 tablespoon honey
    ◦ 2 tablespoons peanut oil
    ◦ 2 cloves garlic, minced or grated
    ◦ 4 cups mixed vegetables, such as Chinese broccoli, bell peppers, carrots, broccolini, cauliflower, snow peas
    ◦ 1 jalapeo pepper, seeded and chopped (optional)
    ◦ 2 large eggs, beaten
    ◦ 2 chopped green onions or 1 tablespoon chopped cilantro, for serving

    Recipe

    Bring a large saucepan of water to a boil over high heat. Add the rice noodles and cook, according to the package directions, until softened. Drain and set aside.

    Meanwhile, in a small bowl, whisk together the soy sauce, fish sauce, oyster sauce, honey, and cup of water.

    Heat the oil in a large skillet over medium-high heat. When the oil shimmers, add the garlic, veggies, and jalapeo (if using) and cook until the veggies are soft, about 5 minutes. Push the veggies to one side of the pan. Add the eggs to the empty side of the pan and cook, gently scrambling them, until they are just cooked through, about 2 minutes. Add the noodles and soy sauce mixture to the skillet and gently toss to combine all the ingredients. Simmer the pad see ew for 5 minutes, or until the sauce coats the noodles. Top with green onions and serve immediately.

    ❧ If you find your vegetables are a little crisper than you'd like after cooking, simply cover the skillet and cook for a few minutes more. Doing so will steam the veggies and help get them to the crunch level you'd like.
