    Lemon-Poppy Seed Fried Chicken Salad

    "Chicken salad always sounds good to me, and this one is over-the-moon good. It's savory, crispy, sweet, tangy, creamy, and nutty all at once. The Greek yogurt and fresh lemon zest add a little tang, and then there's the fried chicken. You read that right: fried chicken, not tired old boiled chicken. Serve this chicken salad to your mama, your sister, your neighborhood ladies, your teacher, your preacher, and anyone else you love. Pile it on a buttery croissant, serve it with pretty crackers, or scoop it right into a Bibb lettuce boat on each plate."

    List of Ingredients

    â—¦ 1 cup plain Greek yogurt
    â—¦ ¾ cup mayonnaise
    â—¦ 2 tablespoons champagne vinegar
    â—¦ 2 to 3 tablespoons honey
    â—¦ 1 teaspoon Dijon mustard
    â—¦ 1 teaspoon poppy seeds
    â—¦ Grated zest of 1 lemon
    â—¦ 5 or 6 deli fried chicken tenders, cut into bite-size pieces
    â—¦ 3 green onions (green parts only), chopped
    â—¦ 2 or 3 celery stalks, chopped
    â—¦ 1 cup sliced seedless red grapes
    â—¦ ½ cup pecan halves
    â—¦ Salt
    â—¦ Ground black pepper

    Recipe

    In a small bowl, whisk together the Greek yogurt, mayonnaise, champagne vinegar, honey, mustard, poppy seeds, and lemon zest. Taste and adjust, adding more honey, vinegar, or zest for your taste.

    In a large bowl, combine the fried chicken bites, green onions, celery, grapes, and pecans. Stir in the mayonnaise mixture and toss to coat. Taste for salt and pepper. The quicker you serve it, the better, so the fried chicken crispies are still crispy.

    Serves 4 to 6
