    Mama's Cranberry Salad

    Recipe Introduction

    "When Moses was leading the people through the Red Sea headed for the Promised Land, I feel sure that the women were carrying Jell-O salad. Okay, maybe not really. But Jell-O salad has been around for a long time—and for good reason. It can be made ahead, and everyone loves it, so it's perfect for barbecues, holidays, potlucks, picnics, and crossing the Red Sea with 3 million of your closest friends. This is my version of my mama's recipe."

    List of Ingredients

    â—¦ 2 cups hot water
    â—¦ 2 (3-ounce) packages cranberry Jell-O (not sugar-free)
    â—¦ 1 (14-ounce) can whole cranberry sauce
    â—¦ 1 (20-ounce) can crushed pineapple
    â—¦ 1 (15-ounce) can mandarin oranges, drained
    â—¦ 1 (8-ounce) package cream cheese, at room temperature
    â—¦ 1 cup whole sour cream
    â—¦ ½ cup powdered sugar
    â—¦ 1 teaspoon vanilla extract

    Recipe

    In a large bowl, stir together the hot water and Jell-O packets until dissolved. While the liquid is still hot, stir in the cranberry sauce until it has dissolved and mixed in well. Stir in the crushed pineapple with its juice and the mandarin oranges. Pour the mixture into a 9-by-13-inch casserole dish and refrigerate for several hours, until set.

    In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese, sour cream, powdered sugar, and vanilla until smooth. Gently spread the topping over the set. Jell-O. Serve immediately, or cover and refrigerate until serving time.

    Serves 8 to 10
