    Chesapeake Bay Oyster Stew

    List of Ingredients


    • 1 cup milk
    • 1 cup light cream
    • 1 cup shucked fresh oysters
    • 2 Tbsp butter
    • Salt to taste
    • Cayenne pepper to taste
    • Tabasco sauce, for garnish


    Instructions


    1. Heat the milk and cream together in a saucepan until very hot, but do not allow to boil. Add the oysters, butter, and salt.

    2. When the butter has melted, remove the stew from the direct heat. Place the saucepan over or in a larger pan of hot water. Allow the stew to ripen a few minutes, stirring it gently.

    3. Taste for salt, and add cayenne to taste. Pass the Tabasco and fresh, crisp oyster crackers or French bread.

      Serves 2 to 4
