    Bacon-and-Bourbon Waffles

    List of Ingredients

    ½ cup heavy whipping cream
    2 teaspoons plus 2 tablespoons bourbon
    1½ cups cake flour
    1½ teaspoons baking powder
    ¼ teaspoon salt
    3 large eggs, separated
    2 tablespoons sugar
    ½ teaspoon vanilla extract
    1 cup milk
    2 tablespoons maple-smoked bacon drippings
    1½ tablespoons butter, melted
    1 cup cooked and crumbled bacon slices
    Vegetable cooking spray
    ½ cup maple syrup
    ½ cup salted European-style butter, melted
    Crisp cooked maple-smoked bacon slices

    Recipe

    Beat heavy whipping cream and 2 teaspoons bourbon at medium speed with an electric mixer until soft peaks form. Cover and chill for later use.

    Stir together cake flour and next two ingredients in a large bowl. Whisk together egg yolks and sugar 2 minutes or until pale. Add remaining 2 tablespoons bourbon and vanilla, whisking until sugar dissolves. Whisk in milk, bacon drippings, and 1½ tablespoons melted butter. Stir milk mixture into flour mixture just until combined. Beat egg whites at medium speed with an electric mixer until soft peaks form. Gently fold egg whites and 1 cup bacon into batter.

    Cook batter in a preheated Belgian waffle iron coated with cooking spray until golden (about ½ cup batter per waffle). Drizzle each waffle with 2 tablespoons maple syrup and 2 tablespoons melted butter. Top each serving with ¼ cup reserved bourbon-spiked whipped cream. Serve immediately with crisp bacon slices.
