    Beeb's Blackberry Cobbler

    Source of Recipe

From "Southern Grit" by Kelsey Barnard Clark

    Recipe Introduction

"Beeb was my great-grandmother Lil's little sister. She was a consummate baker, and many of my great-grandmother's pastry recipes came from her. This is a classic batter cobbler recipe that can be made with just about any fruit filling. I dare you to find one that isn't appealing."

    List of Ingredients

    â—¦ 1 cup all-purpose flour
    â—¦ 1 cup plus 2 tablespoons sugar
    â—¦ 1 tablespoon baking powder
    â—¦ Pinch of salt
    â—¦ ¾ cup whole milk
â—¦ ½ cup unsalted butter, melted
â—¦ 4 cups fresh blackberries (or blueberries, strawberries, cherries, or raspberries)
â—¦ 1 teaspoon fresh lemon juice
â—¦ Vanilla ice cream, for serving

    Recipe

Preheat the oven to 350° F.
In a medium mixing bowl, sift the flour, 1 cup of the sugar, the baking powder and salt, then whisk in the milk.

In an 8 by 8-inch baking pan, 9 by 9-inch baking pan, or 9-inch pie plate, pour the melted butter, then pour the batter. Evenly disperse the berries over the batter, and sprinkle with the remaining 2 tablespoons of sugar and the lemon juice.

Bake for 20 to 30 minutes, or until bubbling and golden brown.
Serve warm with vanilla ice cream.

    Makes 8 to 10 servings
