    Beer-Battered Southern-Fried Shrimp

    Recipe Introduction

    "Southerners love beer with fried seafood, so it naturally became part of the batter. For this recipe, buy the largest shrimp you can find with the tails still attached."

    List of Ingredients

    • Vegetable oil
    • ½ cup all-purpose flour
    • ½ cup cornstarch
    • ½ tsp kosher salt
    • ½ cup beer (not dark)
    • 4 Tbsp unsalted butter, melted
    • 2 egg yolks
    • 2 pounds large or jumbo shrimp, peeled and deveined
    • Cocktail sauce

    Recipe

    Pour the oil to a depth of 2 inches in a large Dutch oven. Place over medium-high heat and bring to 375°F.

    Meanwhile, in a large mixing bowl, combine the flour, cornstarch, and salt. Add the beer, butter, and yolks, stirring until the mixture is smooth. Dip the shrimp in the batter and drop a few at a time in the hot oil.

    Fry until golden brown, about 1 to 2 minutes, and then remove with a slotted spoon. Repeat with the remaining shrimp. Drain on paper towels and serve warm with cocktail sauce.

    Makes 6 servings
