    Country Ham Biscuits

    From "My Mother's Southern Kitchen" by James Villas

    List of Ingredients


    • ½ cup (1 stick) butter, at room temperature
    • 2 tsp Creole mustard
    • 2 tsp Worcestershire sauce
    • 2 Tbsp toasted sesame seeds
    • 16 buttermilk biscuits
    • Two 8-ounce slices aged country ham, fried and cut into 1-inch pieces
    • 6 ounces aged Swiss cheese, cut into 1-inch slices


    Instructions


    1. Preheat the oven to 350°F.
      In a small bowl, combine the butter, mustard, Worcestershire, and sesame seeds and mix till well blended.

    2. Open the biscuits and spread the mixture on both interior surfaces. Place a piece of ham and a slice of cheese on the bottom of each biscuit, add the tops, and heat in the oven till the cheese melts, about 10 minutes.

    3. Serve the biscuits as snacks on a luncheon buffet.

      Yield: 16 biscuits; 8 servings


      • To toast sesame seeds:
      Preheat the oven to 350°F. Scatter the seeds evenly on a baking sheet and toast in the oven, stirring, till golden brown, about 10 minutes. Let cool.
