    Delaware Blueberry Fritters

    Recipe Introduction

    "Delaware does not produce North Carolina's quantity of blueberries, but the plump lowbush variety cultivated there has exquisite flavor and texture that make the berries ideal for desserts like these beguiling fritters. Be sure to use plenty of oil for frying the fritters, and since canola is relatively bland, don't substitute a more assertive oil that might alter the dessert's overall delicate nature. While the fritters can always be served with ice cream, my friends in Delaware prefer only lots of confectioners' sugar."

    List of Ingredients

    â—¦ 1 cup all-purpose flour
    â—¦ 2 teaspoons baking powder
    â—¦ ¼ cup granulated sugar
    â—¦ ¼ teaspoon salt
    â—¦ â…“ cup milk
    â—¦ 1 large egg
    â—¦ Pinch of grated nutmeg
    â—¦ 1 cup fresh blueberries
    â—¦ Canola oil for deep frying
    â—¦ Confectioners' sugar

    Recipe

    In a bowl, combine the flour, baking powder, granulated sugar, and salt and stir till well blended. In another bowl, whisk together the milk, egg, and nutmeg till well blended, gradually add to the dry mixture, and stir till the batter is smooth.
    Fold in the blueberries.

    In a deep fryer or Dutch oven, heat 2 or 3 inches of oil to 375° F on a deep-fat thermometer, drop ¼ cupfuls of batter in batches (three or four at a time) into the oil, and fry till golden brown on one side, about 3 minutes. Turn the fritters with a slotted spoon, fry till the other sides are golden brown, about 3 minutes, and drain on paper towels.

    Sprinkle the fritters generously with confectioners' sugar and serve warm.

    Makes 4 to 6 servings
