    Fried Corn

    From "Southern Country Cooking from the Loveless Café"

    List of Ingredients


    • 6 ears Silver Queen or other white corn
    • ½ cup bacon drippings
    • ¼ cup plus ¼ cup (1 stick) butter
    • Salt and pepper
    • 2 cups water
    • 1 cup milk


    Instructions


    1. Over a large cast-iron skillet cut and scrape the corn off the cobs with the milky corn liquid.

    2. Turn the heat to high. Add the bacon drippings and ¼ cup of the butter to the skillet. Add salt and pepper to taste. Cook for 3 minutes, browning the corn before stirring.

    3. Stir in the milk and continue cooking until the milk is absorbed. Reduce the heat to medium and add the remaining ¼ cup butter. Cook until the butter is melted and mixed throughout.

      Makes 4 to 6 servings.
