    Garden Tomato Pie

    Recipe Introduction

    "I was looking through some of my late mother's recipes and remembered that she made this tomato pie for my dad when he was alive. Hope you enjoy."

    List of Ingredients

    ◦ 1 (9-inch) frozen deep-dish pie shell, baked and cooled
    ◦ 2 large red or green tomatoes (or enough to fill the pie shell), peeled and thickly sliced
    ◦ Salt and pepper
    ◦ 1 teaspoon dried sweet basil or 1 tablespoon fresh chopped basil
    ◦ 1 tablespoon fresh chopped chives
    ◦ 1 slice bacon, crisply cooked and crumbled
    ◦ 1 cup mayonnaise
    ◦ 1 cup grated Cheddar cheese

    Recipe

    Preheat the oven to 350 degrees.

    Fill the pie shell with the tomato slices, and sprinkle with the salt and pepper to taste, the basil, chives, and bacon. Mix the mayonnaise with the cheese, and spread the mixture over the tomatoes.

    Bake for 30 minutes, or until lightly browned.

    Makes 6 to 8 servings
