    Hushpuppy Fried Catfish

    Recipe Introduction

    "You will love how this batter makes the catfish puff up gloriously when fried."

    List of Ingredients

    • Vegetable or canola oil for frying
    • One 8-ounce package hushpuppy mix
    • ½ cup milk
    • ½ cup water
    • 1 egg, lightly beaten
    • 1 Tbsp hot sauce
    • ½ tsp cayenne
    • ½ tsp salt
    • Four 6-ounce catfish fillets

    Recipe

    Pour the oil to a depth of ½ inch in a large skillet. Place over medium heat and bring to 350°F.

    Meanwhile, in a medium bowl, combine the hushpuppy mix, milk, water, egg, hot sauce, cayenne, and salt. Let stand 4 to 5 minutes.

    Dredge the fillets in the hushpuppy mixture. Carefully place in hot oil and fry 4 to 5 minutes on each side or until golden brown. Drain on paper towels and serve hot.

    Makes 4 servings.
