    Southern Home Mashed Potatoes

    From "The Complete Southern Cookbook" by Tammy Algood

    Recipe Introduction

    "It's basic, but the best. I would venture to say that this recipe has been served repeatedly in nearly every Southern household."

    List of Ingredients

    • 4 russet potatoes, peeled and cut into 4 wedges
    • 4 Tbsp unsalted butter, cut into pieces
    • ½ cup half-and-half
    • ¾ tsp kosher salt
    • ¼ tsp black pepper

    Recipe

    Fill a large saucepan with water and bring to a boil over medium-high heat.

    Add the potatoes and cook 25 minutes, or until tender. Drain and return to the saucepan. Add the butter and with a potato masher, crush the cooked potatoes into very small pieces.

    Add the half-and-half, salt, and pepper. Continue mashing until you reach the desired consistency. Serve warm.

    Makes 4 to 6 servings.
