    My Thai Pizza

    Recipe Introduction

    A delicious gourmet pizza. A bit time-consuming to prepare, but worth it. Do NOT omit the sauce.

    List of Ingredients

    COCONUT MARINADE
    3/4 cup unsweetened coconut milk
    2 tblsp minced garlic
    3 tblsp minced fresh cilantro
    2 tblsp fish sauce (Thai or Vietnamese)
    1 tblsp soy sauce (dark)
    1 tsp turmeric
    1 tsp sugar
    1/2 tsp ground white pepper
    1 lb. boneless chicken breasts or thighs

    SWEET CHILI GARLIC SAUCE
    1 cup distilled white vinegar
    1/2 cup sugar
    1-1/2 tsp salt
    1-1/2 tsp bottled Asian chili-garlic sauce

    FOR PIZZA
    One crust
    Vegetable oil spray
    1-1/2 cup shredded mozzarella
    1-1/2 cup shredded monterey jack
    1 cup fresh bean sprouts
    1 cup chopped fresh cilantro
    3 thinly sliced large green onions (incl. green tops)
    1/4 cup coarsely chopped dry-roasted peanuts

    Recipe

    1. MARINADE CHICKEN:

    Mix all of the marinade ingredients in a glass baking dish. Rinse chicken, pat dry, and add to marinade. Turn to coat well. Cover and refrigerate, turning chicken several times, for about 4 hours. Return to room temperature before cooking.

    2. MAKE THE SWEET CHILI GARLIC SAUCE:

    In a small saucepan, combine the vinegar, sugar, and salt over medium-high heat and bring to a boil, stirring to dissolve the sugar and salt. Cook until the mixture is syrupy, about 15 minutes. Stir constantly and do not allow to burn. Remove from heat, stir in the chili-garlic sauce and set aside. The sauce will thicken further as it cools.

    3. WHEN READY TO MAKE THE PIZZA:

    Preheat oven to 350 degrees. Cover baking dish containing chicken and marinade with foil, and bake until chicken is tender and just opaque when cut into at the thickest part with a small sharp knife (about 20 mins for breasts or 45 mins for thighs).

    Remove the pan from the oven, uncover, and set aside to cool. As soon as the chick is cool enough to handle, transfer it to a work surface and reserve the pan juices. Shred or chop the chicken into very small pieces and transfer to a bowl. Drizzle the pan juices over the chicken and toss to coat well. Allow to cool (drain immediately before adding to pizza).

    Preheat oven to temperature listed on pizza crust package. Brush the crust with oil, then top with cheeses, leaving a 1/2 inch border around the edges. Distribute chicken evenly over the cheese. Bake for time indicated on pizza crust package.

    Remove pizza to wire rack and allow to cool for 2 minutes. Lightly brush edges with peanut oil. Sprinkle with bean sprouts, cilantro, green onion, and peanuts. Drizzle with Sweet Chili Garlic Sauce and serve immediately. (Keep extra drizzle sauce at the table)
