    Kathy's Vanilla Extract

    Source of Recipe

    Recipe Introduction

Been using the same bottle for years, just adding beans and rum. The absolute best!

    List of Ingredients

10 + good quality vanilla beans
750 ml. (3 cups) rum, or substitute with vodka or brandy (45% alcohol)

    Recipe

Take 2 beans and split them length wise, but leave ends intact.
Cut vanilla beans into 1/2-3/4 inch pieces.
Place beans in bottle of rum.
Shake well and place in cool, dark place to age.
Once each day, vigorously shake bottle 30 secs.

It will take 30-days (2 months even better!) for vanilla extract to mature.
*I wait until its dark brown before I use it and shake bottle often in its curing process.

As you use vanilla, replace with more rum.
When bottle is 1/4 full add 3-4 more beans and alcohol to fill.
Let stand another week before using.
This will last for years, and the cost is penny's compared to the store brought stuff!

Vanilla beans are good as long as they have vanilla scent. When they’ve lost their scent, discard and replace with fresh beans.
If you choose to remove vanilla beans from alcohol, dry them thoroughly and place in canister of sugar to make vanilla sugar.

For $45 dollars, I was sent 30 Madagasgar or Tahitian vanilla beans, which means each bean cost me $1.50. At the grocery store, I spent $8 for one bean!
