    List of Ingredients




    1 cup all purpose flour
    1/8 tsp salt
    1 stick butter, room temperature
    1/3 cup sugar: add to the butter and blend until light and fluffy
    1 tsp vanilla extract
    1 egg yolk, (reserve egg white for glossing the tops of the cookies if you want)

    1/2 cup jam, preserves, spreads of your choosing.

    Preheat oven to 350 degrees.

    Blend flour and salt and set aside.
    In separate mixer, whip butter that has been at room temperature until light and fluffy.
    Add sugar & blend until light and fluffy.
    Add egg yolk and blend.
    Add vanilla and blend.
    Add flour and salt mixture; beat until blended.
    Blend until it forms a dough ball.
    Take small teaspoon size portions and roll into little balls.

    Place on greased cookie sheet (or parchment lined)
    Space them on the cookie sheets....they grow!

    Next, into each ball on the cookie sheet, indent it with your thumb or finger (or even knuckle)
    Bake at about 10 minutes.

    Take them out of the oven. They will have puffed up a bit, and the indentation will be fairly lost at this point.

    Again, indent cookies with back of spoon this time, while still hot.

    Place whatever filling you would like (about 1/2 tsp. in each cookie)
    Bake an additional 10 minutes, or until they are golden brown on edges.
