    List of Ingredients




    1 tbsp. oil
    1/2 clove minced garlic, or garlic salt to taste
    2 cup chicken broth, or water
    3 tbsp. tomato sauce
    1 cup long grain rice
    2 green onions, diced
    1 small slice bell pepper, diced
    1 tomato, (diced fine)
    1 pinch whole cumin
    1 tsp. salt
    pepper to taste

    STOVETOP:

    Brown rice in hot oil until golden and keep on medium flame.
    Push rice off to side of pan.
    On other side of pan, add vegetables and saute.
    Stir in tomato sauce and broth or water.
    Bring to a boil.
    Cover and simmer 20 minutes.

    NOTE:
    You can make Spanish Fideo using the same recipe with just a few changes.

    Use 4-5 bundles fideo (in Mexican food section) and follow the directions except:
    - Keep the flame on low while browning. It burns easier.
    - Don't need to cover.

    INSTANT POT:

    Sauté onions in oil until they begin to soften (about 5 mins).
    Add rice, garlic, salt, and pepper and sauté 4-5 mins until rice is a light golden color (stir constantly).
    Add tomato, tomato sauce and cumin and sauté another 1-2 mins.
    Next add water mix well & scrape bottom of pan to deglaze and rice stuck on there.
    Turn off Instant Pot, then turn back on and set to 'Manual' for 10 minutes with steamer vent sealed.
    Finally, do a quick release when the time is up.

    *Can double, but remember that for every cup of rice you will double the water. It important to keep the rice to water ratio exact.
