    2 cups raw whole pumpkin seeds, rinsed and drained
    2 1/2 tsp. butter, melted
    1 pinch salt

    Recipe



    Soak the seeds in salt water:

    Fill large bowl about 2/3 with water, add salt and stir. Soak for 8 - 48 hours and drain.

    "Salt water deactivates enzyme inhibitors in seeds; they can irritate your stomach, and removing them allows production of more vitamins in seeds. Many traditional groups like Aztecs soak pumpkin/squash seeds in salt water before dehydrating them. Many people also find that doing this dramatically improves the flavor of the seeds."

    Dry with paper towels.
    Toss seeds in bowl with melted butter and salt.
    Spread seeds on cookie sheet in a single layer.

    Preheat oven to 300 F.
    Bake about 45 minutes or until golden brown; stir occasionally.
    They’ll be done when they’re golden, and they’ll become crunchier as they cool.

    SEASONINGS OPTIONS - Try these tasty combos:

    Sweet: honey, cinnamon, sugar
    Spicy: olive oil, cayenne pepper, smoked paprika, salt, pepper
    Zingy: peanut oil, soy sauce, crumbled seaweed, ground ginger, spicy red chili sauce
    Addictive: melted butter, thin slices of garlic, coarse sea salt
