    Coconut Cupcakes w/ Lemon Filling

    When I last made these, I decided that the white cake mix ended up with a much too tender texture for filled cupcakes. I believe that using a pound cake mix would be better. A pound cake mix will probably result in fewer cupcakes, though. This is just a cake mix fix up that I came up with for Mother's Day 2008. I don't yet have a go-to scratch white cake recipe - I'll have to work on that! But this is very good and the buttercream is so delicious and luxurious that it covers a lot of sins!

    List of Ingredients

    White cake mix - or pound cake mix - see note above
    Coconut flavoring
    1 jar of lemon curd
    1 batch of CakeLove Italian Meringue Buttercream
    Shredded coconut
    Optional: Yellow decorating sugar and candy pearls

    Recipe

    Make cupcakes according to directions, adding 2-3 t. coconut flavoring, to taste. Cool and fill with lemon curd.

    Make the buttercream, adding 2-3 t. coconut flavoring, to taste. Frost cupcakes and decorate with pearls, sugar and coconut.

    Makes 24 cupcakes.
