    French Onion Chicken Casserole

    This is more of a one pan dinner than a casserole. I thought this was just ok when I made it, though Mike liked it a lot. Oddly, it tasted MUCH better the next day.

    3 T. extra-virgin olive oil, divided
    1 large onion, halved and thinly sliced
    2 t. freshly chopped thyme
    Kosher salt
    Freshly ground black pepper
    2 cloves garlic, minced
    1 3/4 lb. boneless skinless chicken breasts, cut into 1" pieces
    1/2 t. dried oregano
    2 T. AP flour
    1 1/2 c. low-sodium beef broth
    1 c. shredded Gruyère
    Freshly chopped parsley, for garnish (optional)

    Using a large skillet heat 2 T. oil over medium heat. Add the onions, salt, pepper, and thyme. Lower the heat to medium-low and cook, stirring occasionally until the onions are caramelized – it will take at least 25 minutes. Add the garlic and cook an additional minute. Remove from the skillet and set aside. Wipe the skillet clean.

    Season the chicken pieces with salt, pepper, oregano and then toss with the flour. Heat the rest of the oil in the skillet over medium-high heat. Add the chicken pieces and cook until golden all over the mostly cooked through. This will take about 8 minutes.

    Add the broth and put the onions back into the skillet with the chicken. Bring to a boil, then reduce the heat to a simmer and cook until the chicken is cooked through and the liquid thickens slightly, about 10 minutes.

    Add the cheese and cover the skillet. Cook on medium-low until the cheese has melted, about 2 minutes. Garnish with parsley and serve from the skillet.

    Serves 4-6.
